Why is my curry bitter?
Curry turns bitter for four reasons, in the order they usually happen: burnt garlic, over-toasted ground spices, too much fenugreek – seed or kasuri methi – and too much turmeric, or turmeric fried for too long.

Work down the list in order. Burnt garlic is by far the commonest cause and the easiest to miss, because it happens in the first two minutes when nothing looks wrong yet.
How do you take the bitterness out of a curry?
Fat and a little sweetness mask bitterness fastest: a tablespoon of cream, yoghurt or a teaspoon of jaggery. Dilution works better than either, because bitterness is a concentration problem.
Does fenugreek make curry bitter?
Fenugreek is the most likely single culprit. The seed is strongly bitter by nature and 2 g is already a full dose for a curry serving four; double that and bitterness is the dish.
Can too much turmeric make a curry bitter?
Turmeric turns dusty and bitter above roughly 3 g per kilogram, and worse if it is fried on its own in a dry pan. It is a colour and earthiness spice, not a flavour to lean on.
Does burnt garlic make curry bitter?
Burnt garlic is the commonest cause of all. Garlic scorches in under a minute at the heat used for frying onions, which is why it goes into the pan after them and not with them.
Will sugar fix a bitter curry?
Sugar hides bitterness rather than removing it, and works best paired with acid – a teaspoon of jaggery with a teaspoon of lemon. On a badly burnt base it will not be enough.
