Why is my karahi watery?

A karahi is watery because it was simmered instead of reduced – a karahi is cooked uncovered over high heat so the tomato water boils off in ten to fifteen minutes and the oil splits out, so a lid, added water, or tinned tomatoes used with their juice will each leave it thin.

These are two different methods, not two spice mixes. A karahi made with a lid on becomes a curry – a perfectly good one, but not a karahi.

How do you thicken a karahi without cornflour?

Raise the heat and keep reducing. A karahi thickens by losing water, not by adding starch, and five more minutes uncovered will usually do it.

Should you put a lid on a karahi?

No. The lid is the single commonest reason a karahi comes out thin – it returns the steam to the pan, so the tomato water never leaves.

Why is there no oil floating on my karahi?

No oil on top means it has not reduced far enough. The split oil is the finished signal, and it appears only once most of the tomato water has gone.

Fresh or tinned tomatoes for a karahi?
