Method

9 steps
  1. Gently combine the meatball ingredients. Avoid overmixing.

  2. Form 16 meatballs and refrigerate for 10 minutes.

  3. Brown them in the olive oil for 5–6 minutes, then remove.

  4. Cook the onion in the same pan until soft.

  5. Add the garlic, chilli and oregano.

    Cook for 30 seconds.

  6. Add the passata and simmer for five minutes.

  7. Return the meatballs, cover and simmer gently for 15–20 minutes.

  8. Check they are cooked through.

  9. Finish with basil and the grated cheese, and serve with spaghetti or crusty bread.
