Method
8 stepsMix the chicken with yoghurt, AL Mix and lemon.
Marinate for 30 minutes if possible.
Heat the oil in a wide pan over high heat.
Cook the chicken for 8–10 minutes until browned and fully cooked.
Let the marinade reduce until it clings to the meat.

Warm the parathas in a dry pan.
Spread mint yoghurt down the centre of each paratha.
Add chicken, onion, cucumber, coriander and tamarind chutney.
Squeeze over lemon, roll tightly and briefly toast seam-side down.
For a Kolkata-inspired egg kathi roll, add a thin omelette to each paratha before filling.
