Method
8 stepsPat the beef dry, then mix it with the egg white.
Combine the cornflour and AL Mix.
Coat the beef thoroughly.

Fry at 180°C for 2–3 minutes until crisp, working in small batches.
Stir-fry the pepper and carrot for two minutes in a clean wok.
Mix the sauce ingredients and add them to the vegetables.
Bubble for 1–2 minutes until sticky.

Add the beef and toss very briefly to coat it.
Finish with spring onions and serve immediately.
The beef loses its crispness if it sits in the sauce.
