Method

8 steps
  1. Heat the oven to 200°C.

  2. Arrange the potatoes in one layer in a deep roasting dish.

  3. Mix the oil, lemon juice, garlic, oregano, AL Mix and stock.

  4. Pour this over the potatoes and toss thoroughly.

  5. Roast for 35 minutes, then turn every wedge.

  6. Continue roasting for 25–35 minutes until the liquid has evaporated and the edges are deeply golden.

  7. If they become tender before browning, raise the heat to 220°C for the final 10 minutes.

  8. Taste before adding any salt.
