Method
8 stepsToss the cauliflower with the olive oil, AL Mix and one tablespoon tahini.
Spread it over a large tray without crowding.

Roast at 220°C for 25–30 minutes, turning halfway.
Add the drained chickpeas for the final 15 minutes so they crisp lightly.

Whisk the dressing ingredients until smooth, adding the water gradually.
Spread hummus across each bowl.
Add the cauliflower, chickpeas, cucumber, tomato and pickles.
Finish with dressing, pomegranate and parsley.
