Make shallow cuts in the chicken and coat it thoroughly.

Refrigerate for at least four hours, ideally overnight.
Remove from the fridge 30 minutes before cooking.
Roast at 200°C for 35–45 minutes, turning once.
Grill for the final 3–5 minutes to create darker, charred edges.
Confirm the chicken reaches 75°C internally.
Rest for five minutes, then serve with rice and peas, slaw and lime.
