Pineapple Chicken Skewers

Method

  1. Mix the soy, honey, pineapple juice, AL Mix, lime and oil.

  2. Marinate only the chicken for 30–60 minutes.

  3. Thread the chicken, pineapple, pepper and onion alternately onto skewers.

  4. Grill, barbecue or griddle for 12–15 minutes.

  5. Turn every few minutes to caramelise each side evenly.

  6. Brush with marinade only during the early stages of cooking.

    Discard anything that has touched raw chicken.

  7. Check the chicken reaches 75°C.
